In keeping with the Channel's intent - "Keeping It Simple, Making It Fun", how about an ukulele cover of Ricky Skagg's Crying My Heart Over You... in a slowed down two-chord version?
Even with the oops and missed chords/notes - only two chords, I am still making mistakes, but it was still another fun one to play ukulele style!
